Quick And Easy Rice Pudding

Ingredients

  • 2 qt. milk
  • 1 qt. water
  • 1 1/2 c. rice (not Minute Rice)
  • 2 eggs, beaten
  • 1 c. sugar
  • 2 Tbsp. vanilla
  • 3 to 4 drops yellow food coloring

Instructions

  1. Mix water, milk and (beaten) egg in pot, add pinch of salt. When it starts boiling add rice, then lower flame and let it roll; not boil.
  2. Stir every few minutes so it doesn't stick.
  3. When you start to see more rice than milk, remove from flame.
  4. Add 1 cup sugar, 2 tablespoons vanilla and yellow food coloring.
  5. Stir until all blended.
  6. Pour into pan.
  7. Add cinnamon on top.
  8. Chill.
  9. Enjoy!
