Quick Apricot Pie

Ingredients

  • 2 c. dried apricots (uncooked)
  • 1 1/2 c. water
  • 1 c. sugar
  • 1/2 tsp. salt
  • 1 Tbsp. lemon juice
  • 1 Tbsp. butter or margarine

Instructions

  1. Put apricots through food chopper.
  2. Combine fruit, water, sugar, salt, lemon juice and butter.
  3. Bring to boil; cook for 3 minutes, stirring constantly.
  4. Prepare pie crust according to directions; pour in filling.
  5. Cover with strips of pastry.
  6. Bake in moderately hot oven (425°) for 30 minutes, or until done. Serves 6 to 8.
