Quick Carrots

Ingredients

  • 6 carrots, grated
  • 2 Tbsp. water
  • 1/4 c. frozen orange juice concentrate

Instructions

  1. Cook carrots in a waterless pan, or with 2 tablespoons water in a heavy, nonstick frypan with a tight-fitting lid.
  2. After carrots come to a boil, turn heat down and simmer until tender (about 5 minutes).
  3. Stir in orange concentrate.
  4. Decorate with thin orange slices.
  5. Lightly toasted, slivered almonds also make a tasty garnish.
  6. Serves 6.
