Quick Vegetable Pasta Primavera

- In a skillet over medium high heat, add 1 cup of stock or broth. Simmer 5 minutes.
- Add the lemon juice, 1 tsp Italian seasoning, minced garlic, pasta water, and wine, butter, or cream. (Wine will keep dish extra light!)
- Simmer 5 more minutes, stirring occasionally.
- Add in cooked vegetables (grilled, sauteed, or steamed). Turn heat to low and saute until vegetables are heated through.
- Using tongs, fold in hot pasta and 1 TBSP grated Parmesan cheese until combined.
- Serve with freshly grated Parmesan cheese, if desired.
