Quick Vegetable Pasta Primavera

Ingredients

  • 1 cup chicken stock or broth
  • 2 cups cooked vegetables leftover
  • 1 lemon juiced
  • 1 garlic clove minced
  • 1 teaspoon italian seasoning
  • 1 tablespoon white wine butter, OR cream
  • 1 tablespoon grated Parmesan cheese more for serving if desired
  • 5 cups pasta cooked, 8-12 oz dry

Instructions

  1. In a skillet over medium high heat, add 1 cup of stock or broth. Simmer 5 minutes.
  2. Add the lemon juice, 1 tsp Italian seasoning, minced garlic, pasta water, and wine, butter, or cream. (Wine will keep dish extra light!)
  3. Simmer 5 more minutes, stirring occasionally.
  4. Add in cooked vegetables (grilled, sauteed, or steamed). Turn heat to low and saute until vegetables are heated through.
  5. Using tongs, fold in hot pasta and 1 TBSP grated Parmesan cheese until combined.
  6. Serve with freshly grated Parmesan cheese, if desired.
