  1. Press the dough down with your finger tips evenly to flatten it out in a circle. Stretch and pull the dough from all sides to get it into the right size. You can push out thicker areas of dough as well. Try not to get it too thin in any one spot, it should be as close to even thickness as you can get all around. You can also pinch the outside edges up along the circumference if you want a crust to help keep the toppings within. For size, aim for what will fit on your pizza paddle. Things get tricky if it's hanging off. Just aim for a rough circle shape. The less of a circle it is, the more rustic it is.
  2. When you have the dough the size you want, slide it around on flour some more to make sure it's moving freely. This is important so it will slide easily off the pizza paddle. If the elasticity in the dough makes it shrink back down when it's not clinging to the counter any more, stretch it out again a bit more.
  3. Sprinkle cornmeal evenly over the pizza paddle. This is to help the pizza slide onto stone. You're looking for consistency like this.
  4. Gently place the pizza dough on the paddle.
  5. Give it a few quick short horizontal back/forth motions to make sure the dough is sliding freely
  6. Spread the marinara sauce around on the dough to get a thin, even coverage. Should look something like this
  7. Add your toppings! Ham, pineapple, peppers, pepperoni, whatever.
  8. Cover with mozzarella cheese
  9. Give it another few horizontal shakes like in step 21 to make sure it's ready to slide onto the pizza stone
  10. Oven should be preheated by now, or close to. Open the oven and pull out the rack a bit to reach better
  11. Carefully slide the pizza off the paddle and onto the stone
  12. Close the oven and cook for about 8 minu
