Rum Ricotta Pudding

Ingredients

  • 4 lb. Ricotta cheese
  • 1 pt. milk
  • 1/2 c. powdered sugar
  • 6 oz. rum
  • 1/2 c. powdered instant coffee

Instructions

  1. Blend Ricotta and milk.
  2. Add sugar and rum; mix well until custard consistency.
  3. Place in serving dishes; chill.
  4. Just before serving, dust with powdered instant coffee.
  5. Serves 25.
