Rusty'S Snapper Fingers

Ingredients

  • ripe tomatoes (or canned whole)
  • Italian flavored bread crumbs
  • salt and pepper
  • Parmesan cheese, grated
  • allow 1/2 lb. snapper fillet per serving
  • allow 1/8 stick (1 Tbsp.) margarine or butter per serving

Instructions

  1. Mix margarine or butter, white wine and lime juice together in a cup. Grease bottom of baking dish (size of dish depends on number of servings or you can use individual dishes). Cover bottom of dish with thinly sliced tomatoes (peel fresh ones first). Sprinkle the bread crumbs over tomatoes (generous amount to cover tomatoes). Place fish on top of bread crumbs. Warm the margarine (butter) mixture to melt and keep it mixed together while you pour over fish. Salt and pepper lightly. Sprinkle top with Parmesan cheese. Bake at 500° for 11 to 12 minutes. If fillets are 3/4 inch thick, bake for 15 to 17 minutes.
  2. Individual baking dishes are super hot, warn guests.
