Ingredients

  • 1 lb sausages
  • 1 head escarole
  • 1 can cannellini beans
  • 1 tsp salt
  • 1 cup water

Instructions

  1. Wash the escarole and place it in 1 cup of boiling water with 1 teaspoon of salt.
  2. Bring to a boil and cook for approximately 2 minutes.
  3. Remove the escarole from the water and reserve the liquid.
  4. Chop the escarole.
  5. Cook the sausages until browned, then add the cannellini beans and chopped escarole.
  6. Add the reserved escarole cooking liquid as needed to reach desired consistency.
  7. Simmer until flavors meld and ingredients are heated through.
