Simple Beets Salad

Ingredients

  • 2 lb. beets, peeled, cooked just tender and julienned
  • 5 cloves garlic, chopped
  • mayonnaise to taste
  • salt and pepper to taste
  • 2 Tbsp. slivered toasted almonds

Instructions

  1. In a large bowl, put together beets and garlic. Add enough mayonnaise to just coat beets and garlic. Season with salt and pepper. Add almonds and toss until well mixed. Chill before serving. Serves 6 to 8.
