Speedy Veggie Wrap-Ups

Ingredients

  • 8 oz. shredded Monterey Jack cheese with jalapeno pepper (2 c.)
  • 2 c. purchased broccoli coleslaw
  • 1 small tomato, seeded and chopped
  • 8 (9 or 10-inch) flour tortillas

Instructions

  1. Heat oven to 350°.
  2. In medium bowl, combine cheese, broccoli coleslaw and tomato.
  3. Place 1/2 cup mixture in center of each tortilla.
  4. Roll tortilla up, folding in ends.
  5. Place on ungreased cookie sheet; cover with foil.
  6. Bake at 350° for 8 to 10 minutes or until cheese is melted.
  7. Serves 4.
