Ingredients

  • 2 lbs ground chuck or 2 lbs hamburger
  • 2 tablespoons tender cure curing salt (a curing salt...other brand OK, too!)
  • 1 tablespoon liquid smoke
  • 1 tablespoon mustard seeds
  • 12 tablespoon fresh coarse ground black pepper
  • 12 teaspoon garlic powder or 12 teaspoon garlic salt
  • 14 cup water
  • 12 teaspoon jalapeno powder (OR other strong pepper mix,dry)

Instructions

  1. Mix spices together.
  2. Add water to the spices.
  3. Mix with the ground hamburger, mix well.
  4. Form into 3 or 4 rolls, depending on how"fat" you make them.
  5. Cover rolls with foil.
  6. Refrigerate 24 hours.
  7. Preheat oven to 300 degrees.
  8. Bake the sausage rolls for 2 hours in oven.
  9. Cooland drain off any fat.
  10. (wrap paper towels around them to absorb any grease, after they are completely cool).
