Spicy Pineapple Sticks

- Combine first 4 ingredients; tie in a cheesecloth bag. Combine spice bag, sugar, and vinegar in a stainless steel stockpot. Bring to a boil. Add pineapple sticks. Reduce heat; simmer, stirring occasionally, 25 minutes or until pineapple is clear. Remove spice bag; discard.
- Pack pineapple into hot sterilized jars, and cover with hot syrup, leaving 1/2-inch headspace. Remove air bubbles. Cover with metal lids, and screw bands tight. Process in boiling water bath 10 minutes.
