Spinach Con Queso

Ingredients

  • 1 c. milk
  • 1 1/2 lbs. of shredded jalapeno Monterey Jack cheese
  • 1 c. baby spinach, finely chopped
  • 1/2 c. diced pimentos (4 oz. jar), drained
  • 1 c. onion, finely diced
  • 1 c. finely diced tomatoes

Instructions

  1. Over low heat, warm milk in a large heavy pan. When milk is warm to the touch, slowly stir in cheese. Wait for cheese to melt, stirring occasionally, add the remaining ingredients. Mix thoroughly and remove from heat. Mixture is best when reheated in the microwave. Makes about 1 qt.
