Strawberry Creme Cookie Bars

Ingredients

  • 16 ounces, weight Refrigerated Sugar Cookie Dough (I Use Pillsbury)
  • 1 cup Heavy Cream
  • 2 Tablespoons Granulated Sugar
  • 1 teaspoon Pure Vanilla Extract

Instructions

  1. Preheat oven to 400°F.
  2. On a clean work surface lightly dusted with flour, roll out dough into a rectangle. Place on a nonstick baking sheet and bake 14 minutes or until lightly brown. Allow to completely cool.
  3. In a stand mixer with paddle attachment, add heavy cream, sugar, and vanilla extract. Mix on low speed. Add jam and increase speed to high. Mix several minutes until light and creamy. Immediately frost cookies and refrigerate until ready to serve.
