Strawberry Flans

Ingredients

  • 3/4 c. orange juice
  • 6 sponge cake shells
  • 3 c. strawberries, halved
  • 3 Tbsp. sugar
  • 1 1/2 c. heavy cream

Instructions

  1. Sprinkle 1 tablespoon of orange juice in center of each shell. Cover and refrigerate.
  2. Combine remaining juice with strawberries and sugar; mix gently.
  3. Cover and chill 1 hour.
  4. Divide strawberries equally into shells.
  5. Pour over any remaining liquid. Whip the cream until stiff.
  6. Fold in Cointreau.
  7. Spoon over strawberries.
  8. Serve immediately, garnished with whole berries. Yields 6 servings.
