Ingredients

  • 1 c. coconut
  • 1/4 c. butter
  • 1 1/2 c. graham cracker crumbs
  • 1 pkg. lime jello
  • 1 c. hot water
  • 1/2 c. sugar
  • 2 Tbsp. lemon juice
  • 1 c. canned milk, chilled and whipped

Instructions

  1. Brown coconut in butter until golden brown, stirring constantly.
  2. Add the cracker crumbs and mix well.
  3. Press 1/2 of the mixture into the bottom of a 9 x 9-inch pan.
  4. Dissolve jello in hot water; stir in sugar and lemon juice.
  5. Chill until slightly thick. Fold in whipped milk.
  6. Spoon into pan.
  7. Top with remaining crumbs. Chill until firm.
  8. Garnish with whipped topping and a cherry. Excellent.
  9. Serves 8.
