Ingredients

  • 1 c. plus 1 Tbsp. plus 1 tsp. sugar
  • 1 c. Japanese vinegar
  • 1 tsp. ajinomoto
  • 2 Tbsp. sea salt

Instructions

  1. Combine the sugar, Japanese vinegar, ajinomoto, and sea salt in a saucepan.
  2. Boil gently until the sugar and salt are dissolved.
  3. Allow to cool before using to season sushi rice.
