Tamarind Chutney

Ingredients

  • 1 jar of concentrate or 1 package of dried tamarind
  • 1 quart hot water
  • 1-2 cups brown sugar
  • 1/2-1 teaspoon salt
  • 1-2 tablespoons garam masala
  • 1-2 chopped green chilies

Instructions

  1. Dissolve concentrate in hot water. If using dried tamarind, soak tamarind in boiling water until softened. Remove seeds and tamarind pulp by pressing through a strainer.
  2. Add the balance of ingredients, heat to dissolve sugar, and store in a glass jar. Keeps 4 weeks in refrigerator.
