Taro Chips

Ingredients

  • 6 cups peanut oil
  • 2 large Taro roots (about 3/12 lbs)
  • 1/2 tsp salt

Instructions

  1. Heat oil in a large saucepan over med-high heat until temp registers 375 degrees on a candy thermometer.
  2. Slice Taro as thinly as possible using a mandolin or vegetable slicer.
  3. Fry Taro sliced in a single layer w/o crowding them, until they are golden brown. 45 to 60 seconds per side.
  4. Transfer chips with a slotted spoon to a paper-towel lined baking sheet.
  5. Blot chips with paper-towels & sprinkle with salt.
  6. Repeat with all taro serve with tropical fruit salsa.
