Tomato Mash/Hash

Instructions
- Peel and cook potatoes.
- Mash and season with pepper.
- Finely chop onion and soften in a pan in a little oil.
- Add to potatoes with eggs.
- Mix until smooth and creamy.
- Stir in herbs and chopped sun-dried tomatoes.
- Spoon mixture into a non-stick frying pan sprayed with a little oil.
- Cook over a medium heat for 5-6 minutes either side, or shape mixture into 4 patties and cook.
