Ingredients

  • 1 medium snapping turtle (5 to 7 lb.), cut into 1 to 1 1/2-inch pieces
  • 4 eggs
  • 1 c. milk
  • 2 c. bread or cracker crumbs, finely ground

Instructions

  1. Boil turtle pieces until tender; dip into egg/milk mixture (blended well).
  2. Roll in bread or cracker crumbs.
  3. Deep fry until golden brown.
  4. Serve with your favorite vegetable.
  5. Makes approximately 6 servings.
