Ingredients

  • 5 lb. wild plums, halved and pitted
  • 4 c. water
  • 1 (1 3/4 oz.) pkg. powdered fruit pectin
  • 7 1/2 c. sugar

Instructions

  1. In a large kettle, simmer plums and water until tender, about 30 minutes.
  2. Pour the mixture through a damp jelly bag, allowing juice to drip into a bowl.
  3. Measure 5 1/2 cups of juice; return to the kettle. Add pectin; stir and bring to a boil.
  4. Add sugar; bring to a full rolling boil.
  5. Boil for 1 minute, stirring constantly.
  6. Remove from heat.
  7. Skim off any foam.
  8. Pour hot jelly into hot jars, leaving 1/4-inch headspace.
  9. Adjust caps on jars.
  10. Process jars in a boiling water bath for 5 minutes.
