Yellow Squash Bread

Ingredients

  • 1 1/2 c. milk
  • 1 c. sugar
  • 1 1/4 c. yellow squash
  • 1 tsp. salt
  • 1 stick butter or margarine
  • 1 pkg. dry yeast
  • 7 to 8 c. flour

Instructions

  1. Heat squash and milk in pan until bubbly around edge.
  2. Add margarine and stir until melted.
  3. Stir in sugar and salt.
  4. In a large bowl, mix flour (4 cups) and the yeast.
  5. Stir in milk and squash mixture; add remaining flour to make a stiff dough (stiff enough to knead).
  6. Knead 8 minutes until smooth and elastic.
  7. Place in greased bowl, cover and let rise until double in size.
  8. Punch dough down and shape into rolls.
  9. Let rise again.
  10. Bake in heated oven of 375° for 50 minutes for bread or 15 to 20 minutes for rolls.
  11. Brush top with melted butter while hot.
  12. Colorful and a good keeper.
