Ingredients

  • 1 (16 oz.) can corned beef hash
  • 2 eggs
  • 1 to 2 Tbsp. butter
  • dash of salt and pepper

Instructions

  1. Empty hash into a shallow pie plate or dish.
  2. With a silver spoon, make 2 round wells in hash.
  3. Break eggs into wells and dot with butter, salt and pepper.
  4. Cook in a slow oven at 325° until eggs are firm.
  5. You can also dress this up with a sprinkling of grated cheese and buttered bread crumbs.
  6. Serve with a canned peach half filled with mincemeat on lettuce as a salad.
  7. Voila!
  8. A wonderful lunch in a matter of minutes.
