Ingredients

  • 2 tsp. vegetable oil
  • 1 large onion, diced
  • 1 garlic clove, chopped
  • 2 (10 oz.) cans tomatoes with juice
  • 2 c. cubed raw chicken breast
  • 1 c. corn
  • 1 can cannellini beans
  • 3/4 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. oregano
  • 1/2 tsp. ground cumin
  • 1/8 tsp. cayenne pepper

Instructions

  1. Warm the oil in medium saucepan.
  2. Add onion and garlic; saute for 3 minutes.
  3. Add all other ingredients and bring to a boil over medium heat.
  4. Break up tomatoes with spoon.
  5. Reduce heat to medium-low.
  6. Simmer until the chicken is cooked through.
