Almost Twinkie Cake

Ingredients

  • 1 (18 1/4 ounce) package white cake mix
  • 1 (6 ounce) package vanilla flavor instant pudding and pie filling mix
  • 12 cup vegetable oil
  • 3 eggs
  • 1 cup milk
  • 12 teaspoon salt
  • 12 cup margarine, softened
  • 2 teaspoons vanilla extract, divided
  • 4 tablespoons all-purpose flour
  • 1 cup sugar
  • 12 cup vegetable shortening

Instructions

  1. Combine cake mix and pudding in a large bowl, sift together with a fork.
  2. Make a well in the middle and add oil, eggs, pudding, water, and half the vanilla to it.
  3. Beat this mixture at medium speed for about 2 - 3 minutes.
  4. Pour into a greased and floured 9x13" pan.
  5. Bake at 350F for 40-45 minutes or until a cake tester inserted near the middle comes out clean.
  6. while the cake is cooling, make the filling.
  7. FILLING.
  8. In a saucepan mix the flour with the milk.
  9. Cook this mixture until it thickens, stirring constantly; cool.
  10. Add sugar, salt, shortening, margarine, and remaining vanilla.
  11. Beat this mixture until it is fluffy and resembles the texture of twinkie filling.
  12. Spread this on the cooled cake.
  13. Store the cake in your refrigerator.
