Ingredients

  • 1 1/2 c. water
  • 1 pkg. dry yeast
  • 4 c. flour
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1 egg, lightly beaten with 1 Tbsp. water
  • coarse-grained salt (preferably kosher salt)

Instructions

  1. Dissolve water and yeast.
  2. Mix flour, sugar and salt.
  3. Beat egg lightly with 1 tablespoon water.
  4. With a large spoon, work flour mixture into yeast mixture in a large bowl.
  5. When about 3 cups of flour have been worked in, begin to knead the mixture on a countertop, while working in the remaining mix.
  6. Divide the dough into 18 to 24 parts.
  7. Shape the dough into letters and place on greased pans.
  8. "Paint" with egg-water mixture and sprinkle with salt.
  9. Bake for 25 minutes or until golden brown at 425°.
