Apple Wok Cakes

- Combine flour, milk, salt and egg yolks.
- Mix thoroughly.
- Add apples.
- Beat
- egg whites until stiff, but not dry. Fold in the apple
- mixture.
- Preheat a wok and add the vegetable oil.
- Heat over
- high heat
- until
- oil
- begins to smoke. Reduce
- heat to medium.
- Gently
- drop
- heaping
- spoonfuls
- of batter 1 to 2 at
- a time
- so
- the cakes are about 4-inches in diameter.
- Brown one side,
- then
- turn
- and brown other side. Remove from pan. Sprinkle with sugar.
- Serve warm.
