Apple Wok Cakes

Ingredients

  • 1/2 c. all-purpose flour
  • 1/2 c. milk
  • 2 eggs, separated
  • dash of salt
  • 1 c. thinly sliced, peeled apples
  • 1/4 c. vegetable oil
  • sugar

Instructions

  1. Combine flour, milk, salt and egg yolks.
  2. Mix thoroughly.
  3. Add apples.
  4. Beat
  5. egg whites until stiff, but not dry. Fold in the apple
  6. mixture.
  7. Preheat a wok and add the vegetable oil.
  8. Heat over
  9. high heat
  10. until
  11. oil
  12. begins to smoke. Reduce
  13. heat to medium.
  14. Gently
  15. drop
  16. heaping
  17. spoonfuls
  18. of batter 1 to 2 at
  19. a time
  20. so
  21. the cakes are about 4-inches in diameter.
  22. Brown one side,
  23. then
  24. turn
  25. and brown other side. Remove from pan. Sprinkle with sugar.
  26. Serve warm.
