Apricot-Orange Jam

Ingredients

  • 8 oz. can orange juice concentrate
  • 3/4 c. dried apricots, snipped into quarters
  • 12 oz. apricot nectar
  • 1/4 c. water
  • 3/4 c. sugar

Instructions

  1. In a food processor or blender, process orange chunks, apricots and nectar.
  2. Scrape into heavy 2-quart saucepan.
  3. Stir in 1/4 cup water.
  4. Bring to a boil over medium-high heat.
  5. Reduce to medium and boil gently over medium-high.
  6. Reduce to medium and boil gently for 10 to 12 minutes, until fruit is tender.
  7. Stir in sugar.
  8. Reduce to medium-low and cook at slow boil for 6 to 8 minutes.
  9. Stir often to prevent scorching.
  10. Pour into hot jars. Cover and cool before refrigerating.
