Ingredients

  • 3/4 lb. Monterey Jack cheese
  • 2 c. sour cream
  • 3 c. cooked rice
  • 6 to 8 oz. chopped green chilies
  • 1/2 c. grated Cheddar cheese
  • sliced ripe olives

Instructions

  1. Layer in a 9 x 9-inch baking dish, topping with the grated Cheddar.
  2. Bake in a 350° oven until heated, about 20 minutes. This is good with turkey or beef, as well as Mexican food.
