Ingredients

  • 2 Tbsp. white balsamic vinegar
  • 2 Tbsp. extra-virgin olive oil
  • 1 1/2 tsp. salt
  • 1 tsp. dried oregano
  • 1 tsp. chopped fennel seeds
  • 1/2 tsp. dry mustard

Instructions

  1. Heat oven to 400°F (200°C). In a large bowl, combine white balsamic vinegar, olive oil, salt, dried oregano, chopped fennel seeds, dry mustard, and ground black pepper; reserve 1 tablespoon of the mixture.
  2. Toss the halved potatoes with the remaining mixture to coat evenly. Spread the potatoes on a baking sheet and roast for 25 minutes.
  3. Add the asparagus to the roasted potatoes, toss with the reserved vinaigrette, and serve.
