Ingredients

  • 2 c. milk
  • 3/4 c. water
  • ground cornmeal
  • 1 tsp. salt
  • 4 unbeaten egg yolks
  • 2 Tbsp. oleo
  • 4 egg whites

Instructions

  1. Scald the milk and add water and ground cornmeal, stirring constantly.
  2. Cool the mixture before proceeding.
  3. Add salt and unbeaten egg yolks, mixing well.
  4. Preheat oven to 350°F. Melt oleo in a baking dish and coat the sides.
  5. Beat egg whites until stiff peaks form and fold into the cornmeal mixture.
  6. Pour the mixture into the prepared baking dish and set in a pan of hot water.
  7. Bake for 45 minutes to 1 hour or until set.
