Bacon Peanut Brittle

- 1. Place a small skillet over medium-high heat. Add the bacon and cook for 6 to 8 minutes or until golden and crispy. Remove bacon from the skillet and drain it on some paper towels and set aside.
- 2. Spray a large rimmed baking sheet and a metal spatula with nonstick cooking spray. Combine the sugar, butter, water and corn syrup in a large saucepan over high heat. Bring to a boil and cook for 10 to 12 minutes or until the mixture registers 325°F on a candy thermometer. Remove pan from the heat and whisk in the salt and baking soda. Stir in the peanuts and cooked bacon.
- 3. Working quickly, pour the brittle out onto the prepared baking sheet and, using the coated spatula, spread it out into an even 1/2-inch thick layer. Let it cool completely at room temperature before breaking into pieces.
