Bacon Peanut Brittle

Ingredients

  • 4 slices Bacon, Diced
  • 2 cups Sugar
  • 1 stick Unsalted Butter
  • 1/2 cups Water
  • 1/3 cups Light Corn Syrup
  • 1-1/2 teaspoon Kosher Salt
  • 1/2 teaspoons Baking Soda
  • 2 cups Roasted, Unsalted Peanuts

Instructions

  1. 1. Place a small skillet over medium-high heat. Add the bacon and cook for 6 to 8 minutes or until golden and crispy. Remove bacon from the skillet and drain it on some paper towels and set aside.
  2. 2. Spray a large rimmed baking sheet and a metal spatula with nonstick cooking spray. Combine the sugar, butter, water and corn syrup in a large saucepan over high heat. Bring to a boil and cook for 10 to 12 minutes or until the mixture registers 325°F on a candy thermometer. Remove pan from the heat and whisk in the salt and baking soda. Stir in the peanuts and cooked bacon.
  3. 3. Working quickly, pour the brittle out onto the prepared baking sheet and, using the coated spatula, spread it out into an even 1/2-inch thick layer. Let it cool completely at room temperature before breaking into pieces.
