Bacon Pot Roast

Ingredients

  • 4 slices bacon
  • 1 (3 to 4 lb.) chuck roast
  • lemon pepper marinade
  • 1 (10 3/4 oz.) can golden mushroom soup (undiluted)
  • 1/2 c. chopped dill pickle
  • 2 tsp. Worcestershire sauce

Instructions

  1. Fry bacon in large Dutch oven until crisp.
  2. Crumble bacon and set aside.
  3. Sprinkle roast with lemon pepper marinade.
  4. Brown roast on all sides in hot bacon drippings.
  5. Combine remaining ingredients; mix well.
  6. Pour mixture over roast.
  7. Cover and simmer 2 1/2 to 3 hours, or until roast is tender.
  8. Remove roast to warm platter; sprinkle with bacon.
  9. Serve roast with pan drippings. Serves 8.
