Ingredients

  • 1 white or yellow cake mix
  • 1/2 gallon block ice cream
  • 5 large egg whites
  • 3/4 cup sugar
  • 1 teaspoon flavoring of your choice (optional)

Instructions

  1. Make the cake according to the instructions on the box.
  2. Bake the cake in a 9 x 13-inch pan. Remove from the pan and let it cool completely.
  3. Slice the cake into 4 pieces. Slice the ice cream lengthwise into layers about the same thickness as the cake layers.
  4. Place one layer of ice cream on top of one cake layer.
  5. Place another layer of cake on top of the ice cream, creating a layered cake.
  6. Wrap one cake and ice cream assembly and freeze it for later use.
  7. Beat the egg whites until very stiff.
  8. Add sugar and flavoring to the egg whites and continue to beat until combined.
  9. Spread the meringue mixture over the assembled cake or frozen ice cream.
  10. Preheat the oven to 500°F (260°C). Bake the meringue-topped cake for about 3 minutes or until the meringue is browned.
