Ingredients

  • 4 large apples
  • 1/2 cup apple juice
  • 1 cup old fashioned oats
  • 1 cup walnuts
  • 1 teaspoon cinnamon
  • 1/3 cup pure maple syrup
  • 1/2 teaspoon salt

Instructions

  1. Cut up the apples into slices (leave skin on) and arrange in a large baking dish. Pour apple juice on top of the apples, and set the pan aside. Put the oats, walnuts, cinnamon, and salt in a food processor and pulse until you get a coarse meal. Put the crumble topping in a bowl and add the maple syrup. Mix well and then spoon the crumble topping on top of the apples. Cover with foil and bake for 35 minutes at 400 degrees. Remove the foil and bake for an additional 10 minutes to crisp the topping. Serve warm.
  2. Tip: Take this opportunity to buy fresh apples from the farmer's market and/or buy organic. It's worth it! I leave the skin on my apples for extra nutrients, but feel free to peel them before you cut into slices if you like no skins.
