Basic Brunswick Stew

Ingredients

  • 3 lb. chicken (breast)
  • 3 c. water (more as necessary)
  • 1 1/2 tsp. salt
  • 1 c. potatoes, diced
  • 1 small box frozen baby lima beans
  • 15 oz. can tomato sauce
  • 1 c. onion, chopped (4 Tbsp. minced)
  • 1 small box frozen corn
  • sugar to taste (2 Tbsp.)
  • salt and pepper
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • 1/4 tsp. cayenne pepper

Instructions

  1. Simmer chicken in a large pot with water and 1 1/2 teaspoons salt until tender.
  2. Drain broth and save.
  3. Remove chicken bones and skin.
  4. Cut chicken into small bite size pieces.
  5. Skim fat from broth.
  6. Return broth to pot.
  7. Bring to a boil.
  8. Reduce broth to 2 cups, but save remainder.
