Basic Brunswick Stew
Ingredients
- 3 lb. chicken (breast) ⓘ
- 3 c. water (more as necessary) ⓘ
- 1 1/2 tsp. salt ⓘ
- 1 c. potatoes, diced ⓘ
- 1 small box frozen baby lima beans ⓘ
- 15 oz. can tomato sauce ⓘ
- 1 c. onion, chopped (4 Tbsp. minced) ⓘ
- 1 small box frozen corn ⓘ
- sugar to taste (2 Tbsp.) ⓘ
- salt and pepper ⓘ
- 1/2 tsp. basil ⓘ
- 1/2 tsp. oregano ⓘ
- 1/4 tsp. cayenne pepper ⓘ
Instructions
- Simmer chicken in a large pot with water and 1 1/2 teaspoons salt until tender.
- Drain broth and save.
- Remove chicken bones and skin.
- Cut chicken into small bite size pieces.
- Skim fat from broth.
- Return broth to pot.
- Bring to a boil.
- Reduce broth to 2 cups, but save remainder.
