Basic Egg Pudding Recipe

Ingredients

  • 6 x Egg yolks
  • 1 Tbsp. Cornstarch
  • 2 Tbsp. Water
  • 1/2 tsp Salt
  • 3 x -(up to)
  • 4 Tbsp. Oil

Instructions

  1. 1.
  2. Beat egg yolks till thick and lemon-colored.
  3. Blend cornstarch and cool water to a paste; then add in to Large eggs, along with salt.
  4. Stir in well.
  5. 2.
  6. Heat oil to smoking.
  7. Add in Large eggs; then reduce heat to medium-low.
  8. Cook, stirring in one direction, till mix is smooth, thick and pudding-like.
  9. 3.
  10. Pour into a serving bowl.
  11. Mince smoked ham and sprinkle over as a garnish.
  12. NOTE: Other names for this dish are Imperial Large eggs and Flowing Yellow.
  13. VARIATIONS:1.
  14. For the egg yolks, substitute whole Large eggs.
  15. 2.
  16. In step 1, add in to the egg mix any or possibly all of the following:
  17. a.
  18. 1 c. stock
  19. b.
  20. 1 to 2 Tbsp.
  21. sherry
  22. c. 1/4 c. bamboo shoots, chopped
  23. d. 1/4 c. water chestnuts, chopped
  24. e. 1/4 c. smoked ham, chopped (omit ham garnish)
  25. f. 2 dry black mushrooms (soaked), chopped
  26. g. 2 Tbsp.
  27. dry shrimp (soaked), chopped
  28. 3.
  29. In step 2, when the egg mix begins to thicken, stir in 1/2 c. cooked shrimp, chopped.
