Bay-Steamed Broccoli

Ingredients

  • 2 heads of broccoli (1 1/2 pounds)
  • 1 1/2 cups water
  • 4 fresh bay leaves
  • 4 tablespoons unsalted butter
  • 3/4 teaspoon salt

Instructions

  1. Peel the broccoli stems.
  2. In a pot wide enough to hold the whole broccoli heads, bring the water, bay leaves, butter and salt to a boil.
  3. Add the broccoli and cover.
  4. Cook over moderate heat, turning once, until tender, 15 minutes.
  5. Transfer the broccoli to a warmed platter and cover with foil.
  6. Boil the cooking liquid until reduced to 1/4 cup, 5 minutes.
  7. Pour the liquid over the broccoli, discard the bay leaves and serve.
