Ingredients

  • 1 1/2 lbs chicken, preferably white meat,trimmed and cubed
  • 1 1/2 lbs pork, trimmed and cubed
  • 3 -5 potatoes, peeled and cubed
  • 1 can tomatoes
  • 2 -3 carrots, skinned and grated
  • 1 onion, diced

Instructions

  1. Heat a small amount of vegetable oil in a stock pot, ad d onions and garlic, season thoroughly with salt and lots of pepper, cook until clear, then add meat.
  2. Sear well, stirring to make sure all pieces heat evenly.
  3. Add tomatoes and appx 4-6 cups of water.
  4. Bring to a boil, add carrots.
  5. Boil for appx 1 hour, then add potatoes.
  6. Add seasonings if desired (I use a barbecue rub, or simply add my favorite bbq sauce, 1/2 cup or so. The real flavor comes from the meat and tomatoes, though).
  7. Cook, loosely covered, on medium heat for appx 3 hours until meat has fallen apart, tomatoes are completely cooked away, and potatoes have cooked apart.
  8. Stir continuously while cooking to keep from burning.
  9. Serve over rice.
