Beans With Small Shell Pasta

Ingredients

  • 1 1/3 cups small shell pasta
  • 2 teaspoons olive oil
  • 1/2 cup green bell pepper, chopped
  • 1 tablespoon garlic, finely chopped
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1/4 teaspoon crushed red pepper flakes (to taste)
  • 1 (16 ounce) can garbanzo beans, rinsed and drained
  • 2 tablespoons dried basil
  • 2 tablespoons parsley flakes
  • 1/4 cup asiago cheese, finely shredded

Instructions

  1. Cook pasta according to package directions, omitting salt and oil. Drain and set aside.
  2. Meanwhile, in a medium saucepan, heat olive oil over medium heat. Add bell pepper and garlic. Cook, stirring occasionally, until vegetables are soft, 3 to 5 minutes.
  3. Add tomatoes and hot pepper flakes. Bring to a boil over high heat. Reduce heat and simmer, uncovered, 10 minutes.
  4. Stir in beans, basil, and parsley. Cook until beans are heated through, about 2 minutes, stirring occasionally. Stir in cooked pasta and heat through.
  5. Spoon into serving bowls and top each with Asiago cheese.
