Ingredients

  • 1 (1 lb.) can shoestring beets
  • 1 (3 oz.) package lemon jello
  • 1/4 cup sugar
  • 1/4 cup vinegar
  • 1 tablespoon horseradish

Instructions

  1. Drain beets and save the liquid.
  2. Measure the beet liquid, adding enough water to make 1 1/2 cups.
  3. Bring the liquid to a boil.
  4. Remove from heat and add lemon jello, sugar, vinegar, and horseradish.
  5. Stir until the jello and ingredients are dissolved.
  6. Add the beets and pour the mixture into a 1-quart mold.
  7. Chill until set.
