Biscoff Oreo Bars

Ingredients

  • 8 whole Oreo Cookies
  • 8 whole Biscoff Cookies
  • 4 Tablespoons Butter, Melted
  • 16 ounces, weight Cream Cheese, At Room Temperature
  • 1/2 cups Sugar
  • 2 whole Eggs

Instructions

  1. Preheat oven to 325°F.
  2. In your food processor, pulse cookies until they are crumbs. Mix with melted butter, and press into an 8x8 baking dish.
  3. Bake crust for 10 minutes. Remove from oven and let cool.
  4. In your electric mixer, cream cream cheese and sugar together. Mix in eggs, vanilla and Biscoff spread.
  5. Pour into your cooled crust. Return to oven to bake for 40-45 minutes or just until the cheesecake has set. If it starts to crack, remove it, you are overcooking it.
  6. Refrigerate for 4 hours, slice into bars and enjoy. Sprinkle tops with cookie crumbs if desired.
