Black Beans From Scratch

Ingredients

  • 1c black beans (or other variety)
  • 2 bay leaves
  • 4 garlic cloves
  • 1t salt
  • 1/2t baking soda

Instructions

  1. Soak beans in a covered pot overnight. Drain. Fill again. Add bay leaves, pierce garlic cloves with a fork and add to pot, salt and baking soda.
  2. Cover pot almost completely, so steam can escape. Bring to a boil; once boiling, lower to a simmer and cook about 1 hour, until tender.
