- Soak beans in a covered pot overnight. Drain. Fill again. Add bay leaves, pierce garlic cloves with a fork and add to pot, salt and baking soda.
- Cover pot almost completely, so steam can escape. Bring to a boil; once boiling, lower to a simmer and cook about 1 hour, until tender.
