Blender Peanut Mousse

Ingredients

  • milk
  • 1 envelope unflavored gelatin
  • 2/3 c. peanut butter pieces
  • 3 Tbsp. sugar
  • 1/2 c. heavy or whipping cream

Instructions

  1. In saucepan, heat 1/2 cup milk just to boiling.
  2. In blender, sprinkle gelatin over 1/2 cup cold milk.
  3. Let stand 2 minutes. Add hot milk. Blend 1 minute. Add 1/2 cup peanut butter pieces.
  4. Blend until melted.
  5. Add sugar, cream and 3 ice cubes.
  6. Blend until smooth.
  7. Pour into 4 dessert dishes.
  8. Freeze 20 minutes. Garnish with remaining peanut butter pieces.
  9. Makes 4 servings.
