- Wash and thinly slice (leaving the skins on) the potatoes. Combine potatoes in a roasting pan with garlic, olive oil, basil and salt & pepper, to taste. Bake for approximately 20 minutes in a 425° oven. Add the fillets, wine, lemon juice and water. Bake for another 10-15 minutes until fillets are well done.
