Ingredients

Instructions

  1. Catch a possum and parboil it whole for about 1 hour or until tender.
  2. Rub salt and pepper all over the cooked possum.
  3. Place the possum in a large roaster pan, surrounding it with small baking-sized sweet potatoes.
  4. Bake at 300°F for 1 hour or until the potatoes are done.
