Ingredients

  • 1 lb black-eyed peas
  • 1 tsp salt
  • 2 small bird peppers
  • 4 cloves garlic

Instructions

  1. Soak the black-eyed peas overnight.
  2. Remove the husks by rubbing the peas between your hands until they are loose.
  3. Place the peas in water again; the husks will rise to the top. Pour them off.
  4. Grind the peas, garlic, and peppers to a very fine paste.
  5. Save the drippings from the grinder and add them along with the salt to the paste.
  6. Add a little water if necessary to achieve the right consistency.
  7. Beat the mixture with an electric beater until it becomes creamy.
  8. Drop spoonfuls of the mixture into hot deep fat and fry until brown, about 2-3 minutes per batch.
