Broccoli Rabe Souffle

Ingredients

  • 2 lb. coarsely chopped broccoli rabe, cooked and drained
  • 1 c. diced cooked ham
  • 1/2 c. diced Mozzarella
  • 6 eggs
  • 2 Tbsp. Romano cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°.
  2. Beat eggs with Romano cheese.
  3. Combine broccoli with ham, Mozzarella and eggs.
  4. Season to taste.
  5. Butter a 1 1/2 qt. casserole or souffle dish, pour mixture into dish.
  6. Bake uncovered 25 - 30 minutes or until set.
  7. Serves 6 - 8.
