Buffalo Stroganoff

Ingredients

  • 2 Tbsp. canola oil
  • 2 garlic cloves, sliced
  • 1 lb. cubed buffalo stew meat
  • 1 medium onion, chopped
  • 2 (4 oz.) mushroom buttons
  • 1 to 1 1/4 c. nonfat sour cream
  • 12 pitted ripe olives, sliced into rings
  • 1 (10 3/4 oz.) can reduced salt condensed tomato soup

Instructions

  1. In large skillet, saute garlic, meat and onion in canola oil. Add mushrooms, including juice; simmer 10 minutes.
  2. Add olives; simmer 10 minutes.
  3. Add tomato soup, stir and heat through.
  4. Add sour cream; stir and heat through.
  5. Serve over noodles or rice. Sprinkle with grated Parmesan cheese.
  6. Accompany with cold borscht, tossed green salad and garlic bread.
  7. Serves 4.
  8. Total preparation time: 45 minutes.
